Banneton, brotform, proofing basket or wicker basket, however you call it, it’s a must have if you're an aspiring home bread baker. A favorite of artisan bakers for raising bread dough. The basket coils provide a beautiful shape and pattern for a traditional hearth loaf look. This round brotform is made from unprocessed rattan cane and is 100% natural.
Cane baskets also absorb a small amount of moisture during proofing so that the outside of the dough is less sticky. This very thin, slightly drier layer ensures that you can also cut the dough a bit easier (‘scoring’) and that the bread can open nicely during baking.
2 sizes to choose from: 8” sourdough proofing bowl can be used for about a 1 lb or about 0.5 kg of dough and 10” will hold 2 lbs or about a 1kg of dough.
How to Use: Dust the proofing basket with flour and the risen dough drops easily onto your baking surface. For proofing very wet doughs, as called for with the popular no knead bread recipes, for example, the optional cloth liner (included) is the simplest solution. Working flour (rice flour is particularly effective) into the cloth liner will release wet dough.
How to clean: The bread basket bowls can be used with the provided cloth liner, if desired. Without the liner, your banneton basket still does not need much cleaning. Simply shake the excess flour out after each use, and if dough has stuck to it, wait till it dries, then use a stiff brush to take it off or you use hand wash with warm water within 2 minutes and keep dry, or leave somewhere warm and dry.
